The unusual formation of the province of Teramo means that the local cuisine is very varied, with traditional dishes from the inland mountainous area and seafood specialities from the coast. The undisputed queen is homemade pasta: Spaghetti chitarra with meatballs, made using the traditional roped tool, and egg tagliatelle that are used in delicious soups, like the famous “virtu” an atonement soup that recalls the cult of the ancient peasant customs: made from 50 seasonal ingredients: fresh vegetables, herbs, fresh and dried pulses, mixed pork meat, meat sauce and spices.
The traditional pastoral activities are revived in the meat specialities, such as lamb chops and the famous kebabs, in dialect rustell' or arrustell’, always served with ‘onde bread, slices of homemade bread with extra virgin olive oil.
The leading dessert is the Parrozzo, a dome made of semolina and almonds covered with chocolate, that Gabriele d’Annunzio dedicated a few verses to in the Abruzzo dialect.
